Molded Chocolate for Your Valentine with Cheryl Wakerhauser of Pix Pâtisserie
Learn how to use polycarbonate molds to make soft center chocolates and novelty items, and where you can purchase almost any mold you heart desires! We will make the following chocolate treats:
The Ambrosia Port reduction and rosemary ganache in a red marbled jewel shell
"Nutella" Fleur de Lys
Single chocolate stemmed roses
Chocolate lollipops
Three dimensional novelty items such as Chocolate bunnies in a motorcycle with sidecar, the Eiffel Tower, Easter eggs, and more
Techniques learned include how to: Temper chocolate in your microwave oven Use a polycarbonate mold to create a chocolate with a soft center Use a two sided mold for hollow sculpture Use colored cocoa butter to brighten up your chocolates
Each student will take home a chocolate rose, lollipop, and novelty chocolate as well as a box of chocolates for their Valentine sweetheart.
