Happy 4th of July to all of you. I hope you are having a great day.
 
We did not plan any classes this week as we wanted to get our professional kitchen (back kitchen) ready to do more hands-on classes. You'll find more space there so you aren't quite as crowded around the stove. We hope you like the improvements we've made. Our staff have worked really hard to make this happen so they are taking a well-deserved break today to spend time with their friends and families.

Joshua Weber of Abernathy Trading Company has us all hooked on aromatic black peppers. He travels the world to bring us fabulous herbs and spices and he has black peppers we can't find elsewhere.
 
One of our favourites is the Ashanti pepper from Africa. This black gem is a true pepper but we find it much more aromatic than a regular black peppercorn. 
 
Joshua recently did a pepper tasting for a crowd of delighted people and he's offered to do it again for us. One common question was: how do you use the Ashanti pepper in every day cooking? Joshua shared with us two of his favourite preparations:
