Bacon, Blue Cheese and Tomato by Josie Ross
This is a very elegant modern twist on BLTs. The creamy Oregon blue cheese, smoky bacon, juicy heirloom tomatoes and crisp toasts are combined in a delightful tower that’s somewhere between a salad and a sandwich. It would also be a very nice appetizer or first course. Not only is it delicious, but very colorful!
6 oz country style or French bread (about 6 slices) 6 ounces bacon, cut into ˝ inch lardoons 5 tablespoons olive oil 1/3 cup finely chopped sweet onion 3 tablespoons Sherry vinegar 2 lbs heirloom tomatoes sliced into 1/3 inch slices 1 cup fresh basil leaves 3 oz Oregon blue cheese crumbled
2 tablespoons basil, chiffonnaded
Sauté the bacon in a large skillet until crispy. Transfer the bacon to a paper towel to drain.
Drain the fat from the pan and add the bread. Lightly sauté the bread slices in the same skillet. Transfer the bread to a plate and sprinkle with salt and pepper.
Heat the olive oil in a large sauté pan. Sauté the sweet onion until it is translucent. Stir in the vinegar. Season with salt and pepper and set aside. Place one slice each on six plats. Place one slice of tomato on each piece of bread, top with some of the bacon lardoons. Add another slice of tomato, and sprinkle that with some of the blue cheese. Continue to layer slices of tomato, bacon and blue cheese until all of the ingredients have been used.
Drizzle some of the warm vinaigrette over the tomato stacks, then sprinkle with fresh basil.
