Braised Celery with Breadcrumb Topping Inspired by Molly Stevens
Serves 4-6 as a side dish
5 tablespoons butter 2 lbs celery, washed and trimmed 1 onion, chopped 1 clove garlic, minced 1 teaspoon each thyme and parsley, minced Coarse salt and black pepper 1/3 cup vermouth 1 cup chicken stock 1/2 cup grated Parmigiano-Reggiano ½ cup bread crumbs
Preheat the oven to 325°F. Use one tablespoon of butter to coat the inside of a 9 x 13 baking dish. Cut each celery stalk into 2 -inch pieces, all about the same size. Arrange them in a layer in the baking dish. In a medium sauté pan, melt the remaining butter. Sauté the onion and garlic until soft. Season with salt and pepper. Stir in the vermouth and the stock and cook until the liquid reduces and thickens. Remove from heat, and add the herbs. Spread the sautéed vegetables and remaining liquid over the celery. Cover the dish with foil, and bake for about an hour, or until the celery is soft.
While the celery braises, combine the cheese and breadcrumbs.
When the celery is tender, remove from the oven. Increase the oven temperature to 400°F. Remove the foil carefully and sprinkle the cheese and bread crumbs over the celery. Return to the oven until the cheese is melted and the top is crusty and browned, about 10 more minutes. Allow to stand for a few minutes before serving.
