Bruschetta with Roasted Tomato, Mozzarella and Basil

The secret of this recipe is that all the produce must be ripe and full of flavor as it is in summer.

 

1/2 baguette or crusty long loaf bread, sliced into ¼ inch slices
2 large cloves garlic, smashed away from skin
Extra-virgin olive oil, for drizzling
3 small tomatoes, cut into 1/8 inch slices

6 ounces Mozzarella cheese (in water)
20 fresh basil leaves
Coarse salt

 

Preheat oven to 375°F (or if you prefer you can also grill the bread). Place bread slices on a sheet pan. Drizzle and brush with olive oil. Bake for 8 minutes until golden, remove from sheet pan and rub toast with the smashed garlic. Place slices of tomato on the sheet pan, brush with olive oil and season with salt and pepper and bake in oven for 8 to 10 minutes until they start to caramelize. Remove from oven and let cool to room temperature. Thinly julienne the basil and cut mozzarella into one inch long matchsticks, place into a bowl and sprinkle with olive oil, pepper and fleur de sel (sea salt). Gently toss or mix. Place a tomato slice on each bruschetta, spoon with mozzarella and basil. If you like, drizzle a little more EVOO (Extra Virgin Olive Oil), Fleur de Sel and enjoy!
