Chanterelles with Blue Cheese

1 small onion, diced

1 pound fresh chanterelle mushrooms, cleaned and sliced

4 ounces Stilton or other blue cheese, crumbled

˝ cup olive oil, divided

Salt and freshly ground black pepper

3 tablespoons white balsamic vinegar, divided

6 ounces mixed greens

 

In a large skillet over medium high heat, heat 3 tablespoons of the olive oil. Add the onion and sauté until lightly brown. Add 2 more tablespoons of olive oil and add the mushrooms. Sprinkle lightly with salt and pepper, sauté until the mushrooms are tender (5-6 minutes).   Add 1 tablespoon vinegar and simmer until the vinegar evaporates, stirring constantly.

 

Remove from heat.

 

In a salad bowl, place the mixed greens and top with cheese. In a small bowl, whisk together the remaining oil and vinegar. Toss the greens with the dressing. Top with the warm mushrooms, toss lightly, and serve.
