Chocolate Ice Cream Sandwiches

 

These are deliciously rich chocolate sour cream cookies; easily good enough to eat alone, but when sandwiched with rich chocolate ice cream- they rise to a whole new level of decadence. You’ll be happy that there are lots of cookies leftover after making these sandwiches.

 

1 pint good quality chocolate ice cream (or use your favorite flavor)

 

1 cup flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup butter

7 tablespoons unsweetened cocoa

1 cup granulated sugar

1/3 cup packed brown sugar

1/3 cup sour cream

1 teaspoon vanilla

 

Chocolate sauce, warmed, for serving (optional)

Berries for garnish (optional)

 

Preheat oven to 350°F.

 

Combine flour, soda, and salt; set aside. Melt butter in a large saucepan over medium heat. Remove from heat; stir in cocoa powder and. Add sour cream and vanilla; stir to combine. Fold in flour mixture until moist. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray.

 

Bake at 350° for 8 to 10 minutes or until almost set. Cool on pans 2 to 3 minutes or until firm. Remove cookies from pans; cool on wire racks.

 

15 minutes before you are ready to assemble the sandwiches, remove ice cream from the freezer to soften. On a clean work surface, lay down 6 cookies with the bottoms up. Place a tablespoon or so ice cream on the cookie base- top with another cookie. Repeat until with remaining 5 cookie bases (or make as many as you like).  Immediately freeze cookies on a baking sheet, covered with cling film to re-firm. 

 

When ready to serve, place an ice cream sandwich on a small dessert plate- drizzle with warm chocolate sauce and garnish with berries.
