Creamy Summer Succotash

4 oz pancetta or bacon, cut ¼ inch pieces
1 medium onion, chopped
1 green bell pepper, cut into1/2-inch dice
2 cups fresh lima beans, blanched
2 cups fresh corn kernels

¾ cup chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh basil

 

In a large skillet over moderate heat, cook the pancetta or bacon, stirring occasionally, until crisp. Transfer bacon with a slotted spoon to paper towels to drain, and then cook onion and bell pepper in the fat in the skillet over moderate heat, stirring frequently, until vegetables are softened, 5 to 6 minutes.

Add lima beans, corn, broth, salt, and pepper, and simmer, covered, until vegetables are tender, about 6 minutes. Remove the lid, increase heat to high and add cream. Simmer uncovered, until liquid is reduced by half, 7 to 10 minutes. Stir in herbs and salt to taste. Sprinkle with reserved pancetta and serve.
