Dark Chocolate Pudding

1/2 cup sugar

1/4 cup Cornstarch

1/4 teaspoon salt

2 cups whole milk

1 cup cream

2 tablespoons unsalted butter

7 oz good quality dark chocolate, chopped

1 teaspoon pure vanilla

Whipped cream for serving

Combine sugar, corn starch and salt in large saucepan.

Gradually whisk in milk, cream and butter. Stir constantly over medium heat until boiling.

Boil and stir 1 minute. Remove from heat immediately.

Stir in chocolate and vanilla until well blended and melted.

Refrigerate if desired (I like it warm just as much as I like it cold).

Serve (warm or) chilled topped with whipped cream.
