Ginger Chocolate Chip Gems

1 C               unsalted butter, room temperature

1 ½ C           brown sugar

1 t                salt

½ teaspoon    cinnamon

½ teaspoon   powdered ginger

1                  large egg

2 t                vanilla extract

3 C               unbleached all purpose flour

½ t               baking soda

3/4 C            crystallized ginger

12 oz            semisweet or bittersweet chocolate chunks

  

Cream butter, sugar, salt & spices in electric mixer with paddle attachment until very light and fluffy, about three minutes.

 

Beat in egg & vanilla until thoroughly combined.

 

Add sifted dry ingredients, and mix until thoroughly combined, scraping sides of bowl once or twice.

 

Finally, add ginger & chunks and mix just to combine.

 

Divide dough into ¼ C size balls and flatten slightly.

Space 2” apart on cookie sheets.

 

Bake at 350 degrees F for 15-20 minutes, until cookies just start to turn golden brown—they should still be a little soft in the center.

 

These cookies are best eaten the day they are made, but will keep in an airtight container for several days.
