Grilled Fig Skewers with Juniper Grove Chevreand Sweet Aged Balsamic DrizzleBy Ericka Carlson
There's nothing quite like fresh figs straight from local farms or your own tree in the back yard.
Serves 4
Extra-virgin olive oil 8 small fresh Mission figs, halved 8 rosemary branches, needles stripped and soaked in water 4.5 oz Juniper Grove Chevre, crumbled 2 tablespoons sweet aged balsamic vinegar
Method: Preheat a grill or grill pan until hot. Oil grill to prevent the figs from sticking.
Place two fig halves on a rosemary skewer and brush cut side of figs with olive oil. Place cut side down on the grill and cook until the figs soften and caramelize, about 5 minutes. Place two skewers on each plate, sprinkle with the Chevre and drizzle with aged balsamic.
