Irish Soda Bread

Adapted from the James Beard Cookbook (1969)

 

My grandmother used to make Irish soda bread in huge quantities. James Beard’s recipe is a bit more delicate and velvety than her traditional, rustic version (and only makes 1 loaf). I follow her instruction of adding some “soured” cream, and I always add dried currants or raisins (dried cranberries are really good too).

 

James Beard strongly recommends serving it toasted with butter. (I agree completely!).

 

4 cups All Purpose flour

¾ teaspoon baking soda

2 teaspoons salt

¾ teaspoon baking powder

11/2 cups buttermilk

½ cup sour cream

 

Preheat the oven to 375°F.

 

Sift the dry ingredients together. Combine the buttermilk and sour cream. Gently stir in enough of the dairy mixture to make a soft, biscuit like dough. Knead on a lightly floured board for 2 minutes, until smooth. Form into a round loaf and place in a well buttered 8 inch cake pan. (You can bake it on a greased sheet pan too). Make an “X” on the top of the loaf with a sharp knife. Bake the bread for 35 minutes, or until the loaf is nicely browned and sounds hollow when tapped. Let the bread cool before slicing.
