Brown Sugar Pecan Cake

 

1 cup pecans, toasted and chopped

1 cup dark brown sugar, packed

1 cup butter (plus some for the pan)

4 eggs

1 tsp.  Vanilla

1 teaspoon rum extract

1 3/4 cups flour

1/2 tsp.  Baking powder

1/4 tsp.  Salt

 

Topping

1 oz butter

1/2 cup dark brown sugar

1/2 cup cream

½ teaspoon rum extract

¼ teaspoon salt

 

Preheat oven to 350°F.

 

Butter and flour an 8 X 8 in pan. In large bowl, beat sugar and butter until light and fluffy. One at a time, beat in the eggs. Add in the vanilla and rum extract. Sift together the flour, baking powder and salt, then beat into the sugar mixture. Fold in the toasted pecans.

Pour the batter into the prepared pan.

 

Bake about 60 minutes. Cool completely before glazing.

 

While the cake bakes, make the topping:

 

Melt the butter over medium heat in a saucepan. Add in the brown sugar and cream; stir to incorporate. Bring the mixture to a boil and cook for about 5 minutes, until it is thickened and glossy. Remove pan from the heat, stir in extract and salt, and set aside to cool. When cake and glaze are cool, drizzle the glaze over cake.
