Savory Strawberries and Blue Cheese

4 cups arugula

1 oz thinly sliced mint leaves, shredded

1 oz thinly sliced basil leaves, shredded

1 oz walnuts, toasted

½ cup tablespoon extra-virgin olive oil

1 oz balsamic vinegar

1 oz minced shallot

½ cup blue cheese crumbles

1 cup fresh strawberries, hulled and sliced

Salt and pepper, to taste

In a large bowl, gently toss all salad ingredients.

In a small bowl whisk the oil into the vinegar and shallot.

Pour over salad and toss gently until well coated. Divide the salad among four plates and sprinkle with berries and cheese. Season with salt and pepper.
