Lavender Scented Potatoes
An interesting twist on a summer salad. Be sure to use culinary lavender, which you can find at farmer’s markets and at In Good Taste.
1 pound new potatoes, halved (I never peel new potatoes, but it’s up to you) 5 oz olive oil, divided 1 oz mayonnaise Salt and pepper 1 red bell pepper, diced ½ a red onion, diced 1 cup diced celery
½ oz cider vinegar 1 teaspoon garlic, minced ¼ teaspoon dry mustard (optional) 1 tablespoon minced dill 1 tablespoon minced parsley 1 tablespoon minced chives 1 teaspoon lavender blossoms, crumbled
Bring a large pot of salted water to a boil. Cook the potatoes until just tender, but do not allow them to fall apart.
In a large bowl, combine 2 oz olive oil and 1 oz mayonnaise with ½ teaspoon salt and ¼ teaspoon black pepper. As soon as you’ve drained the potatoes, toss the hot potatoes with the olive oil mixture. Set aside to marinate while you assemble the vegetables and make the dressing.
For the dressing, whisk together the vinegar, garlic, mustard, herbs, lavender and a ¼ teaspoon salt. Whisk in the remaining olive oil to form vinaigrette. Taste and adjust seasoning.
Add the diced vegetables to the potatoes and mix well. Toss the potatoes with the vinaigrette. Serve immediately or refrigerate.
