 Lemon Sour Cream Cheesecake

  

For the crust:

1 1/2 cups finely ground graham cracker crumbs

1/4 cup white sugar

7 tablespoons butter, melted

 

Preheat the oven to 375°F.

 

In a large bowl, combine the graham cracker crumbs, sugar, and melted butter until well blended. Carefully press mixture into an 8 or 9 inch pie plate, covering the sides of the pan.  Bake at 375°F for 7-10 minutes. Allow the pan to cool completely before filling the crust.

 

For the filling:

1 lb cream cheese, at room temperature

Dash of salt

2/3 cup granulated sugar

2 eggs

1 teaspoon fresh lemon juice

½ - 1 teaspoon lemon zest (add more if you’d like a stronger flavor)

 

Lower the oven temperature to 350°F.

 

In the bowl of a stand mixer, beat the cream cheese until smooth and fluffy. Add the salt and sugar and combine well. Add the eggs, one at a time. Finally, add the lemon juice and zest. Beat at medium speed for 3-4 minutes, making sure all of the ingredients are well incorporated.

 

Pour the filling into the cooled crust and bake at 350°F for 25 minutes. Allow to cool for 30 minutes before adding the topping.

 

For the topping:

1 cup sour cream

1 teaspoon vanilla

3 tablespoons granulated sugar

 

Combine the sour cream, vanilla, and sugar in a small bowl and whisk well. Spread evenly over the cooled filling. Bake at 350°F for 10 minutes.

 

Cool to room temperature before refrigerating.
