Linguine with Spicy Broccoli Rabe

 

1 lb dried linguine
1 broccoli rabe
5 oz extra virgin olive oil
5 garlic cloves, minced
3/4 teaspoon dried hot red-pepper flakes
3/4 teaspoon salt

Grated parmesan

 

Prepare the broccoli rabe: wash the broccoli rabe, trim and discard the thick stems. Trim the rest remaining into 2 inch pieces.

 

Bring a large pot of salted water to a boil. Add in the pasta-stir to prevent sticking, and cook about 3 minutes. Add the trimmed broccoli rabe to the pasta pot and continue to cook until pasta is al dente (about 3-5 more minutes). Drain the pasta in a colander.

While the pasta cooks, heat the oil in a large heavy sauté pan over moderate heat. Add the garlic, stirring frequently, until garlic is light gold in color. Add the red pepper flakes. Add the drained pasta and broccoli to the pan and toss well to coat with the sauce. Season with salt.

 

Serve in heated bowls, topped with grated parmesan.
