Lucy’s Tomato and Onion Salad

Serves 6

 

6 very ripe medium tomatoes

1 yellow onion, thinly sliced, soaked in cold water for 15 minutes, and drained well

salt, to taste

freshly ground black pepper, to taste

 

To cut a tomato without losing a drop of its juice, hold it over a large bowl and cut off bite-size slivers with a sharp knife. Repeat with the remaining tomatoes. Add the sliced onions, season with salt and plenty of pepper, and toss well. Let sit at room temperature for 20 minutes. Toss again before serving.
