Oregon Berry Fool
This is more rustic than a traditional Fool, where raspberry puree is folded into whipped cream. I chose to leave the berries whole or slice for more texture. I also wanted to use more than one type of berry. There are some perfect culinary marriages, and berries and cream is one of them.
1 pint raspberries, quickly rinsed and patted dry 1 pint strawberries, washed, and sliced
3 oz Framboise 2 ½ pints cups chilled whipping cream 1 1/2 cups sugar ½ pint blueberries or blackberries (or a combination) butter cookies or shortbread, for serving
Combine the raspberries and Framboise in a small bowl. Allow to stand for 20 minutes.
Stir the strawberries into the raspberry mixture.
Beat the cream and sugar in a large bowl until firm peaks form. Fold in half of the whipped cream into the strawberries and raspberries. Carefully fold in the remaining cream. Using half of the cream, spoon some of the mixture into six dessert goblets or wine glasses. Sprinkle with a few of the blueberries. Repeat the layers with remaining cream and top with remaining blueberries. Refrigerate 30 minutes or more before serving.
