Pearl Bakery Chocolate Chunk Cookies

1 Cup unsalted butter, room temperature

1 ½ Cups brown sugar

1 teaspoon salt

1 orange’s zest, finely grated

1 large egg

2 teaspoons vanilla extract

3 Cups unbleached all purpose flour

½ teaspoon baking soda

1 Cup pecan halves, toasted

12 oz semisweet or bittersweet chocolate chunks

 

Cream butter, sugar, salt & zest in electric mixer with paddle attachment until very light and fluffy, about three minutes. 

 

Beat in egg & vanilla until thoroughly combined. 

 

Add sifted dry ingredients, and mix until thoroughly combined, scraping sides of bowl once or twice. 

 

Finally, add pecans & chunks and mix just to combine.

 

Divide dough into ¼ Cup size balls and flatten slightly.

Space 2” apart on cookie sheets.

 

Bake at 350 degrees F for 15-20 minutes, until cookies just start to turn golden brown—they should still be a little soft in the center.

 

These cookies are best eaten the day they are made, but will keep in an airtight container for several days.
