Pumpkin Ginger Muffins

Topped with crunchy ginger sugar, these muffins are a great breakfast or tea treat. You can use turbinado sugar, if you don’t have ginger sugar.

 

Butter, for coating the muffin tins

2 1/4 cups flour

1 cup sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

½ teaspoon ground ginger

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pumpkin puree

¾  cup butter, melted

2 eggs

1/2 cup milk

3 tablespoons ginger or turbinado sugar, for sprinkling

 

Preheat the oven to 375 F. Butter 12 cups in a standard muffin pan.

 

Whisk together the flour, sugar, spices, baking powder, baking soda, and salt.

 

In a separate bowl, whisk the pumpkin puree and the melted butter together. Stir in the eggs and milk thoroughly.

 

Make a well in the center of the dry ingredients; pour the liquids into the well and gently mix.

 

Divide the batter between the muffin cups. Sprinkle each muffin top with ginger sugar.

 

Bake for 16-20 minutes. Cool on a wire rack before removing from the pan.
