Savory Summer Fruit Salad

-serves 4

2 peaches, sliced

2 cups watermelon, cut into 1/2 inch cubes

3 oz goat cheese, crumbled

2 teaspoons sherry vinegar

½ teaspoon salt

1 tablespoon grapeseed oil

1 teaspoon parsley, minced

Coarsely ground black pepper

Combine the peaches, watermelon and goat cheese in a medium sized bowl. In a separate bowl, dissolve the vinegar in the salt. Whisk in the oil. Drizzle the vinaigrette over the salad- toss to combine. Sprinkle the fruit with parsley and coarsely ground black pepper.
