Ten-01 Sweet Onion-Cauliflower Soup

We love this delicious, warming soup created by executive chef of Ten-01, Jack Yoss. He serves it garnished with spicy lamb sausage, almonds, golden raisins, and a drizzle of curry oil. Pure bliss!

1 yellow onion, diced small

¼ lb butter

2 heads of cauliflower, chopped small

1 ½ cups heavy cream

3 cups water

Sweat the onion in the butter over the lowest heat possible until onions are completely soft (about 2 hours).

Add cauliflower and continue to cook over low heat for another 30 min. Add cream and water and simmer for 1 hour. Blend in a stand up blender, add salt and pepper to taste.
