Ken’s Truffle Cookies

1 cup unsalted butter, room temperature

1/2 cup Bakers sugar

1 tsp. Vanilla

1/2 cup very finely chopped hazelnuts

1 cup chopped chocolate

1 cup cocoa powder

1 1/4 cups white flour

1 cup cocoa powder

 

Heat the oven to 350°F. Whip butter, sugar and vanilla together until fluffy.  Add chopped hazelnuts and chopped chocolate.

 

In a separate bowl whisk the flour and cocoa powder together. Add the dry ingredients to the butter mixture and combine thoroughly. If the cookie dough appears crumbly, knead the dough with moistened hands.

 

Form dough into 2” balls. Arrange on a cookie sheet lined with parchment. The cookies will not spread. Bake for 10 to 12 minutes until well set but not brown.

 

While still warm roll in cocoa powder. Cool and roll in cocoa powder again.

 

Make two dozen 2” truffle cookies.
