Zucchini au Gratin

For In Good Taste Cooking School

 

Equipment: Sauté pan, Le Creuset Gratin dish

~ Serves 4

 

1 pound zucchini, cut into ½ to ¼ inch diagonal slices

1 Tablespoon unsalted butter

Salt and pepper

½ cup of bread crumbs

2 eggs

1 cup of heavy cream

¼ cup grated Gruyere Cheese

¼ cup grated Parmesan Cheese

 

Sauté the zucchini in the butter over high heat just until a little color appears on the zucchini. Season with salt and pepper. Pour zucchini into gratin casserole.

 

In a bowl, combine the eggs and cream and whisk until smooth.  Pour this mixture over the zucchini. Sprinkle the bread crumbs evenly over the zucchini. Top with the grated cheese.

 

Bake in a 400°F oven for 15 minutes until the custard is set and the top is browned.
