Spring Pea Soup

3 tablespoon olive oil

3 shallots, finely chopped

2 garlic cloves, minced

3 cups fresh peas (can use frozen, thaw them first)

2 cups chicken broth

1/2 teaspoon salt

1/4 teaspoon pepper

1 tablespoon mint, minced, plus four whole leaves for garnish

Sour cream

 

Heat the oil in a large saucepan. Add shallot and garlic; sweat until translucent. Stir in the peas, broth, and salt and pepper. Simmer for about five minutes. Using an immersion blender, carefully blend the soup until it reaches desired texture. Alternatively, place half of the soup at a time in a blender; cover and process until pureed. (Don’t overfill blender with hot liquids or they may splatter). Return puree to saucepan, stir in sour cream and mint. Garnish with remaining mint leaves and serve.
